
This is a wonderful meal that it is full of flavor. The sausage is a wonderful use of meat and fats creating juicy deliciousness. The zucchini adds a wonderful crunch, and the mushrooms absorb all of the flavors that the dish contains.
Ingredients:
- 8 ounces dry pasta
- 4 cloves garlic chopped
- 3 large white mushrooms sliced
- 2 shallots chopped
- 1 medium zucchini chopped
- 3 Italian sausages casing removed and mashed
- 1 cup tomato sauce (I used Classico tomato and pesto)
- 2 tablespoons olive oil
- 1/2 cup Parmesan cheese
- Cook pasta to package directions.
- Heat olive oil in a large skillet over medium high heat, add shallots and garlic and sweat for about 3 minutes.
- Add sausage to skillet and cook thoroughly, 3-5 minutes, then add mushrooms and sauté until soft. Once mushrooms are cooked add zucchini and tomato sauce and simmer for 5 minutes.
- Combine pasta and sauce stir well and serve hot.
