This delicious salad will have you coming back for seconds, but only because it's delicious not because it leaves you feeling hungry. In fact it is extremely filling :)The sweet hit of honey in the dressing blends wonderfully with the strawberries and is a much healthier option than sugar.
Oh and did I mention it only takes 15 minutes to make.
Ingredients:
- 4 boneless skinless chicken breasts
- 6 cups fresh arugula
- 1 lb fresh strawberries chopped
- 1 tablespoon lemon juice
- 2 tablespoons red wine vinegar
- 1/3 cup honey
- 1 tablespoon safflower oil
- 1 teaspoon poppy seeds
- 2 tablespoons plain low fat yogurt
- Preheat grill to 350°F
- Sprinkle chicken with salt and pepper to taste and cook on grill for about 4-6 minutes per side.
- Cut chicken into bite size pieces and combine with strawberries and arugula.
- Top with 2 tablespoons of dressing.
